Spicy Marinated Shrimp  (printer friendly)
  • 2 T. olive oil

  • 2 T. lemon juice

  • 2 green onion, finely chopped

  • 2 T. horseradish, prepared

  • 2 T. ketchup

  • 1 tsp Tabasco sauce

  • 1 tsp honey Dijon mustard

  • 1 tsp minced garlic

  • 2 lb shrimp

Directions: 
Combine all ingredients but shrimp in a bowl. Add shrimp tossing to fully coat.  
If using frozen shrimp be sure shrimp is fully thawed before combining.  
Cover and refrigerate 4-6 hours or overnight. 
Transfer to serving bowl and serve with toothpicks.
Yields:  30-40 shrimp 
Nutrition Information per Shrimp:  15 calories, 0.7 gm fat, 1.5 gm protein, 0 gm fiber 

Cheese Puffs  (printer friendly)
  • 1 loaf whole wheat bread

  • 1 8oz pkg. 1/3 less fat or light cream cheese

  • 1 c. cheddar cheese, shredded

  • 1/4 c. egg beaters

  • 1/4 c. grated onion

 
Directions: 
Preheat oven to broil.   
Cut bread into small round circles by using a shot glass, small cup, or cookie cutter. Discard left over bread crust.
Line cookie sheet with aluminum foil and arrange bread on sheet.
Mix rest of ingredients in a medium bowl. 
Toast one side of bread in oven for about 1 minute. Remove from oven turn over bread and top with 1 tsp prepared mixture.
Brown cheese topped bread slices under broiler for 3-5 minutes. 
Can serve plain or with a garnish topping of a thin apple wedge, tomato, or chives. 
Yields: about 60 puffs
Recipe can be made ahead of time and frozen before final broiling stage.
