Antioxidant Salad
  • 1 1/2 c. bell red pepper

  • 1 1/2 c. broccoli florets

  • 1 c. carrots, shredded

  • 1/2 c. radishes, diced

  • 1/2 c. dressing

  • 1 T. minced red onion

Oregano Dressing:

  • 1/2 tsp. grated orange zest

  • 1/2 c. cider vinegar

  • 1/4 c. EVOO

  • 3/4 T. dried oregano

  • 1 t. Dijon mustard

  • 1/4 tsp salt

  • 1/2 tsp grated pepper

 
Directions: 
Combine all ingredients for dressing in a cruet or jar and shake well.  
Combine all ingredients for salad in a large bowl.  Separate into individual salad bowls as needed.
