Blueberry Spinach Salad
  • 3-4 c. fresh spinach

  • 1 c. fresh blueberries

  • 1/4 c. red onion, chopped

  • 1/4 c. crumbled feta cheese

  • 1/2 c. walnuts

 

Balsamic Dressing:
  • 3 T. EVOO
  • 1/3 c. balsamic vinegar
  • 1 1/2 tsp Dijon mustard
  • salt and pepper to taste
 
Directions: 
Combine ingredients for dressing in a cruet or shaker and shake well.  
In a large bowl toss spinach, red onion, and walnuts.  Add dressing to the toss just to lightly coat mixture.  
Transfer salad mixture into individual salad bowls. 
Divide blueberries and feta cheese evenly among salad bowls.
