Jon's Chunky Southwestern Salsa
  • 1 (15 oz) can black beans, rinsed & drained

  • 2 (15 oz) cans whole kernel corn, rinsed and drained

  • 8 green onions, chopped

  • 2 jalapeno peppers, seeded & minced

  • 1 green bell pepper, chopped

  • 1 avocado, diced

 

  • 1 (4 oz) jar pimentos

  • 1/2 cup chopped cilantro

  • 2 limes, juiced

  • 1/2 cup reduced fat/light Italian salad dressing

  • 1/2 tsp garlic salt

 
Directions: 
In a large bowl combine black beans, corn, green onions, jalapeno peppers, bell pepper, avocado, pimentos, tomatoes, cilantro, lime juice, and Italian dressing. 
Season with garlic salt. Toss and chill until serving.
Recipe yields a large batch: ~6.5 cups of salsa
