Directions:
In a medium bowl combine flour, baking powder, and salt; set aside.
In a small saucepan, over low heat, heat chocolate until melted, stirring constantly, set aside.
In a medium bowl beat butter and sugar until fluffy. Beat in melted chocolate, egg, and vanilla until combined.
Gradually beat in flour mixture. Divide dough into 4 separate sections and wrap in plastic wrap. Place in freezer for about 20-30 minutes.
Preheat oven to 350 degrees. Remove one section of dough from freezer at a time. Roll into about a 10" long (if dough is too sticky, place back in freezer)
Cut each roll crosswise to 1/4" slices. . Place each slice 1" apart on ungreased cookie sheet.
Bake for 8-10 minutes. Let cool 2 minutes before transferring to wire rack to cool completely.
CHOCOLATE CREAM FILLING:
In medium saucepan melt 1/3 c. or 3 oz chocolate and 2 T. butter over low heat stirring frequently. Cool for about 5 minutes.
Stir in 1/4 c. sour cream. Gradually add powdered sugar until spreadable consistency.
Make sandwich out of cookie spreading about 1/2 tsp. of frosting on half of the cookies, top with remaining cookies.
Great served cold/chilled. Store in airtight container or bag in refrigerator and serve.
