Tabbouleh
  • 2 cups presoaked bulgur*

  • 2 large bunches of flat leaf parsley, chopped

  • 3 green onions, chopped

  • 1/4 tsp black pepper

  • 2 tomatoes, diced

  • 2 cucumbers, diced

  • 3 Tbsp. lemon juice

  • 1 Tbsp. garlic, minced

  • 3 Tbsp. olive oil

 

Directions:

To presoak bulgur place 1 cup dried bulgur in bowl and add 1 cup water, let stand 30 minutes….this will yield 2 cups.

After bulgur has soaked up the water, gently toss all dry ingredients (first 6).

Add the lemon juice and garlic, reserving the oil until later.

Chill for 1 hour to allow the flavors to absorb.

Before serving toss with olive oil.

Excellent on a bed of spinach or other greens.

*Bulgur is a whole grain product and can typically be found in the organic section or where specialty flours are located in your grocery store.

 A 1/2 cup serving of bulgur contains 7 grams of fiber!
