Directions: To presoak bulgur place 1 cup dried bulgur in bowl and add 1 cup water, let stand 30 minutes….this will yield 2 cups. After bulgur has soaked up the water, gently toss all dry ingredients (first 6). Add the lemon juice and garlic, reserving the oil until later. Chill for 1 hour to allow the flavors to absorb. Before serving toss with olive oil. Excellent on a bed of spinach or other greens. *Bulgur is a whole grain product and can typically be found in the organic section or where specialty flours are located in your grocery store. A 1/2 cup serving of bulgur contains 7 grams of fiber! |
