Cuban Black Beans
  • 1 pound dried black beans

  • 1 large onion, chopped

  • 1 large bell pepper, chopped

  • 5 cloves of garlic

  • 1 (14.5 oz) can of diced tomatoes

  • 5 cups of water

  • 2 Tbsp. olive oil

  • 4 tsp. ground cumin

  • 1 tsp. salt (optional)

  • Brown rice or whole grain couscous (optional)

 
Directions: 
Mix all ingredients in slow cooker.
Cover and cook for 6-8 hours on high or until beans absorb most of liquid.   
Serve over brown rice or whole grain couscous.  
Top with small amount of sharp cheddar cheese.
A 1/2 cup serving of black beans has 6 grams of fiber!
